Written by: Layla Mitchell Post by: Yue Jin I love to eat these Pistachio and Oat Squares for breakfast but they are so versatile that they can be a snack or dessert too. The combination of flavor is so good that you will want more than one in a single sitting.
Ingredients: 1 cup pistachios (no shells) 1 cup oats ½ teaspoon sea salt ¼ cup maple syrup 2 tablespoons olive oil ⅓ cup unsweetened coconut flakes Directions: 1. Preheat oven to 350°. Line baking sheet with parchment paper. 2. In food processor combine pistachios, oats, and salt. While the motor is on pour in maple syrup and olive oil. Combine until it forms a wet dough. 3. Pour the dough onto the baking sheet and spread it out evenly. Sprinkle coconut flakes and pistachios on top. 4. Bake for 10-12 minutes until dough is cooked through. 5. When cooled cut into squares.
