The egg white is a high-protein food, but there is only 11g of protein per 100g egg white compared to 16 g of protein per 100g egg yolk. Besides protein, the egg yolk contains triglycerides, phospholipids, omega-3 fatty acids, vitamin D, vitamin A, and protein, fulfilling a human's daily nutrient needs and promoting muscle synthesis. There are some cholesterol controversies over egg yolk. According to USDA, the Dietary Guidelines for Americans suggested consuming less than 300 mg daily dietary cholesterol from 2015-2020. However, in the 2020-2025 edition, The National Academies changed it to "dietary cholesterol consumption to be as low as possible" since there is no strong literature support. Egg also plays an essential role in food production, such as making mayonnaise and meringue, due to the unique property of egg white and yolks. Egg white has a foaming property that can make meringue and cake. Egg yolk has an emulsifying property that helps make mayonnaise. Now, could egg become your good friend?
